No Bake Energy Bites Recipe: Easy, Filling and Delicious

By Amy Romback, Publisher and Editor of Macaroni Kid East Lansing-Okemos-Haslett January 16, 2020

If your kids are anything like mine, they are constantly asking for snacks. Every hour or two I hear the repetitive "Mommy, I'm hungry!"

I'm making an effort to offer more filling snacks.  Instead of reaching for the goldfish crackers or the veggies straws I offer higher protein options in hopes that I won't be a slave to the kitchen (or my kids) all day.

I've been throwing these energy bites together the past couple of Sundays and they last throughout the week. You can switch them up and add different ingredients (think coconut, white chocolate chips, raisins, etc.)  to suite your tastes but I'm partial to the mix below.

All you have to do is mix it, roll it, chill it and ENJOY!

Ingredients

* 1 Cup of Old Fashioned Rolled Oats (uncooked)

*  1/2 Cup of Peanut Butter (smooth)

* 1/3 Cup of Honey

* 1 Tsp of Vanilla Extract

* 1/2 Cup of Dried Cranberries

* 1/2 Cup of Semi-Sweet Chocolate Chips

Directions

1. Mix until ingredients are well combined

2. Roll into 12 balls

3. Chill in the refrigerator for 20-30 minutes

4. Store in an airtight container and enjoy when you see fit!
