"Chilly" weather has officially arrived and with it comes all those yummy, comfort food recipes. Yum!
I wanted to share our favorite (easy) chili recipe. My kids and husband gobble this up every time I make it. My favorite thing about it is that the leftovers taste even better and there's enough for lunch for the rest of the week! Add some cornbread on the side and you're good to go.
Enjoy!
Ingredients |
- 2 pounds of ground beef or ground turkey, browned and drained ( I use turkey and you can't even tell the difference).
- 1 large sweet onion, chopped
- 3 large green pepper, chopped
- 3 celery stalks, chopped
- 1 heaping tablespoon of minced garlic
- 1 can of pinto beans (15 ounce can), drained and rinsed
- 1 can dark red kidney beans (15 ounce can), drained and rinsed
- 1 can Original Rotel Diced Tomatoes (10 ounce can)
- 1 can stewed tomatoes (15 ounce can)
- 2 cans plain tomato sauce (15 ounce cans)
- 1 package of chili seasoning (1.25 ounce package)
Instructions: |
1. Combine all ingredients in a large stock pot.
2. Let simmer for at least 3 hours, stirring occasionally. I usually let mine simmer all day!
3. Garnish with cheddar cheese and sour cream and enjoy!
